Baking baking baking.

Baking has some sort of calming effect on me. Its hypnotic and relaxing. Like a drug. =) Have been baking scones, cupcakes, cookies for the past few months. Scroll down for my peanut butter cupcake recipe! They taste really satisfying, moist and rich with delightful crusty peanut butter/choc swirl tops and easy to make too! Courtesy of bakingsheet . Do try out her recipes! Its tried and tested. =)

Peanut Butter Cupcakes

175g butter, softened
3/4 cup caster (superfine) sugar
3 eggs
1 3/4 cup plain flour
2 tsp baking powder
12 x 1.5 tsp peanut butter

directions :
mix butter, sugar, eggs, flour and baking powder in a bowl and whisk using electric beaters until just combined.
spoon mixture onto muffin cups lined with muffin cases until 3/4 full. drop 1.5 tsp of peanut butter on each muffin mixture and swirl using skewers.
bake in a preheated oven of 160 deg c for 20 mins until cooked.
leave on to cool on wire rack.

U can melt chocolate and swirl it with peanut butter too, it tastes great.=) Just be sure to swirl it evenly, dont leave globs of the swirl toppings on top of the cake batter uncovered as it will char easily.
