Better than Hagrid's Rock Cakes

Better-Than-Hagrid's Rock Cakes - adapted from Mrs Weasley's Rock Cakes at the Floo-Network

2 cups ap flour
1 tsp baking soda
1/2 tsp salt
1/2 cup butter chilled
1/3 cup sugar
1 tsp vanilla extract
1/3 cup currants/raisins/sultanas
1 egg
2 tbsp milk
coarse sugar

Preheat oven to 400F.
Line a large baking sheet with parchment paper.
Whisk the flour, baking soda and salt together in a large bowl and rub in the butter lightly with the fingers until the mix looks like breadcrumbs.
Stir in the sugar and currants.
Beat the egg together lightly with the milk and vanilla.
Pour it into the flour mixture and stir until the dough comes together into a ball.
Shape dough into 2 inch balls, dip the tops in coarse sugar and place on baking sheet. They won't spread very much, so they can be fairly close together.
Bake for about 13-16 minutes, until tops of cakes are light gold.
Remove to a wire rack to cool, or eat them straight away.
Makes 14-16 cakes

I made 14 with mine. I made these for potluck and so far everyone who has eaten the rock cakes had commented that its very nice and were surprised that i had made these the first time. Its really quite idiot-proof.Hehe. The recipe rocks~ =) Pics below...

Baking baking baking.

Baking has some sort of calming effect on me. Its hypnotic and relaxing. Like a drug. =) Have been baking scones, cupcakes, cookies for the past few months. Scroll down for my peanut butter cupcake recipe! They taste really satisfying, moist and rich with delightful crusty peanut butter/choc swirl tops and easy to make too! Courtesy of bakingsheet . Peanut Butter Cupcakes

175g butter, softened
3/4 cup caster (superfine) sugar
3 eggs
1 3/4 cup plain flour
2 tsp baking powder
12 x 1.5 tsp peanut butter

directions :
mix butter, sugar, eggs, flour and baking powder in a bowl and whisk using electric beaters until just combined.
spoon mixture onto muffin cups lined with muffin cases until 3/4 full. drop 1.5 tsp of peanut butter on each muffin mixture and swirl using skewers.
bake in a preheated oven of 160 deg c for 20 mins until cooked.
leave on to cool on wire rack.

U can melt chocolate and swirl it with peanut butter too, it tastes great.=) Just be sure to swirl it evenly, dont leave globs of the swirl toppings on top of the cake batter uncovered as it will char easily.
