I did something cool today. I cooked lunch all by myself. GRIN*

Chicken. Can tell?


proudly presentsss chicken with port vinegar and onions. I chopped the garlice and onions till i almost dozed off. It needs aloooot of garlic and onions can. and it tastes really good. Never judge the book by its look.=)

Stuffed Mushrooms!

Recipe

6 Baby Portabellas/White Mushrooms with nice round caps.
Olive Tapenade(u can substitute it with salted soya beans packaged in glass jars found in ntuc canned food section. (similar taste)
1 log of goat's cheese(any cheese will do)
Olive oil

Preheat oven to 175 degrees Celsius.

Remove stems from mushrooms(can boil the stems to make stock)

Spoon in 1 teaspoon of tapenade(or the salted soya beans)

Top off with a slice of cheese or shredded morzerella!

Drizzle a baking sheet/pan with olive oil and set the mushroom caps faced up on the pan.

Bake for around 20 minutes until the cheese has melted and the mushrooms cooked but still retain their shape.

And tada! Nice and yummy finger food.
Variation: U can also add minced meat marinated with tomato salsa/ bacon before topping with cheese. Do leave a message if theres any other lovely toppings that goes well with the mushrooms!


Baking stuffed portabellas as promised earlier. Its topped with cheese and tapenade given to me by lovely blogger lynda in the food exchange event.

Blogging By Mail parcel has ARRIVED!

Guess what? Fedex came by today.My huge food parcel has finally arrived! All the way from Southern California. Lucky meee.=D


I hastily ripped off the thick sealing tapes and saw this.=) A lovely looking box of double chocalate coated marshmellows with a letter addressed to me.=D Lynda has so meticulously described the foods in the package and e places in which she went to get these. I had a great time reading. Much appreciated.=))


My dear fellow foodie blogger has thoughtfully wrapped everything up in newspapers. They were in Spanish! I looked through the comic strips. Such a refreshing change from newspapers in Singapore even though i dont understand.=)


Lovely olive oil and an unusual looking bottle of port sweet vinegar. This sounds really interesting! But i really have no idea how to go about making vinegrette with both of these. Would they go well with meats? or maybe salads/breads? Any recipes people?=)


Peach salsa from bristolfarms. I am absolutely addicted to this. Just dipped my tortilla chips with this stuff. So going to make more after im finished with this. I think they would taste great on pizzas, pastas, pita breads, tortilla wraps with cheese.=)


Tapenade made out of california olives! This looks absolutely delicious. I imagine that they would taste great on country loafs and pasta. Oh and Lynda included a recipe for stuffed mushrooms with goats cheese using the tapenade. WIll post the recipe up after my experiment.


Boysenberry preserves jam. Lynda declared that this best represents Southern California food history. I have only tasted blueberry, strawberry, apricot jam in SIngapore. Cant wait to spread this on my bread at breakfast.=D


Did i mention that i love chocolate covered expresso beans? These just made my day..with my fav kind of choc too.=)) Both are from Monsieur Marcel, a gourmet grocery at the Original Farmers Market. www.farmersmarketla.com . Sounds really good eh.=D

Lovely Outrageous chocolate covered Marshmellows with caramel and cashew filling. I couldnt resist and ate one while looking through the other delectables.Highly addictive.

Really been verrry busy these few weeks. Been doing nothing but spreeing online and baking to release stress. I've just realised that walking the aisles of the supermarket searching for junk food helps too, despite my mum's constant naggings raining on my poor ears. Im dead broke now, but still lemming for empire tops from forever21 and wetseal. And i want to bake so much more stuff. Like candy corn cookies, monster cookies, different kinds of chocolate chip cookies, my long wanted to make egg tarts, and pizza! HAIZ. Scroll down for some of my baking goodies and recipes.

Nicole's chocolate chip honey cookies
1 1/4 cup ap flour
1 tsp baking soda1/2 tsp salt
1/4 cup white sugar
1/2 cup brown sugar
1/4 cup butter, slightly softened
1 egg
1 tsp vanilla
2 tsp honey
1/2 cup mini chocolate chips

Preheat oven to 375F.Combine flour, soda and salt and mix with a fork.
Cream together butter and sugars. Add egg and beat until fully incorporated.
Stir in vanilla and honey.Add dry ingredients to the sugar mixture in two additions.
Stir in chocolate chips.Drop by heaping teaspoonfuls onto a parchment lined baking sheet.
Bake for 10 minutes, or until cookies all golden all over.
Cool for 2 minutes on baking sheet, then transfer to a rack.
Makes 36 2-inch cookies

Its really good to eat, especially when they are just out of the oven for 2 mins. crispy at the edges and moistly chewy in e middle with choc still melting inside e crumbs. Sinful-ly heaven.=D

P.S: I substituted choc chips for chopped milk choc.
